Pulling off a Mexican Menu

Hello Everyone!!! Ok, I'm back... Wow, time flies when you are having fun. Let me tell you, I have been soooo busy it is crazy!! Just a quick update about The Silver Beet:
1. We are the official catering company to offer Latin Food at the Monaco Banquet Hall in North Hollywood.
2. Last week we catered a FREE buffet at the Scene, Bar in North Hollywood. Buffet opens at 1pm and it stays open all day until about 7pm. This is perfect for those football fans. So in case you are hungry on a Sunday, stop by you will be fed for free...

Today's menu was quick and easy to prepare: (30 people)
2 lbs Ground beef cooked with the following spices:
1 tablespoon of Salt
1 tablespoon of pepper
1 tablespoon of cumin
1 tablespoon of paprika
1 tablespoon of chili powder
1 tablespoon of coriander or cilantro
1 tomato
1/2 grilled onion
(Amount of spices used in 1 pound of beef, however you must taste to make sure it is not too salty)

This I called Beef Tacos with tortillas. Yum... It was delicious. Everyone loved it.

Quesadillas - they were great on the grill.
If you place aluminum foil inside the grill and heat your tortillas with the cheese, it gives it a nice smoky taste to it.

Rice and beans... That's it!! Sooo easy.
In case you don't know how to cook rice in a regular pan here is my recipe:

In a medium pot, heat 1 tablespoon of oil. (Medium to High heat)
Add 1 cup of rice to the oil and 2 table spoons of Mexican Salsa (from the jar)
Quickly mix everything not letting the rice burn.
Add 2 cups of water.
1 tablespoon of salt.
Bring to boil. Once the water has evaporated and you see little holes in the rice, bring the heat to low.
Cover and let simmer for about 20 mins or until rice is completely cooked and all the water has dried out.

So, this menu is as always fast and easy to prepare....
