HAPPY NEW YEAR - Resolutions and Solutions

Hello Everyone!!!
Merry Xmas and Happy New Year... Yes, your New Year's resolutions are probably giving up smoking, going back to the gym, eating less carbs or following your dream (start a new business, go on a trip, etc).

Well, if this sounds familiar, I will share a great place for your hiking day, and a nice recipe for a delicious healthy meal, and the perfect person who will help you attain your dream.

A long day of exercising makes you super hungry and leaves you with little energy to cook.

Here is a simple tasty and healthy recipe:

HEALTHY TUNA MELT
12 ounces canned chunk light tuna, drained
1 medium shallot, minced (2 tablespoons)
2 tablespoons low-fat mayonnaise
1 tablespoon lemon juice
1 tablespoon minced flat-leaf parsley
1/8 teaspoon salt
Dash of hot sauce
Freshly ground pepper, to taste
4 slices whole-wheat bread, toasted
2 tomatoes, sliced
1/2 cup shredded sharp Cheddar cheese

Combine tuna, shallot, mayonnaise, lemon juice, parsley, salt, hot sauce and pepper in a medium bowl. Spread 1/4 cup of the tuna mixture on each slice of toast; top with tomato slices and 2 tablespoons cheese. Place sandwiches on a baking sheet and broil until the cheese is bubbling and golden brown, 3 to 5 minutes.

Pulling off a Mexican Menu

Hello Everyone!!! Ok, I'm back... Wow, time flies when you are having fun. Let me tell you, I have been soooo busy it is crazy!! Just a quick update about The Silver Beet:
1. We are the official catering company to offer Latin Food at the Monaco Banquet Hall in North Hollywood.
2. Last week we catered a FREE buffet at the Scene, Bar in North Hollywood. Buffet opens at 1pm and it stays open all day until about 7pm. This is perfect for those football fans. So in case you are hungry on a Sunday, stop by you will be fed for free...

Today's menu was quick and easy to prepare: (30 people)
2 lbs Ground beef cooked with the following spices:
1 tablespoon of Salt
1 tablespoon of pepper
1 tablespoon of cumin
1 tablespoon of paprika
1 tablespoon of chili powder
1 tablespoon of coriander or cilantro
1 tomato
1/2 grilled onion
(Amount of spices used in 1 pound of beef, however you must taste to make sure it is not too salty)

This I called Beef Tacos with tortillas. Yum... It was delicious. Everyone loved it.

Quesadillas - they were great on the grill.
If you place aluminum foil inside the grill and heat your tortillas with the cheese, it gives it a nice smoky taste to it.

Rice and beans... That's it!! Sooo easy.
In case you don't know how to cook rice in a regular pan here is my recipe:

In a medium pot, heat 1 tablespoon of oil. (Medium to High heat)
Add 1 cup of rice to the oil and 2 table spoons of Mexican Salsa (from the jar)
Quickly mix everything not letting the rice burn.
Add 2 cups of water.
1 tablespoon of salt.
Bring to boil. Once the water has evaporated and you see little holes in the rice, bring the heat to low.
Cover and let simmer for about 20 mins or until rice is completely cooked and all the water has dried out.

So, this menu is as always fast and easy to prepare....

Making a Healthy Choice

Whether you are a stay home mom, you are unemployed or you have a super busy schedule, it is always easy to fall into the fast food trap. Because it is easy on the wallet, fast and it's everywhere, people tend to be drawn by their appealing colorful advertising and sadly, by its taste.

Today I want to introduce you to a recipe I came up with yesterday. It is healthy, fast and tasty.
Usually recipes are made to cook for 4 or more. Haven't they noticed that there are a lot of us who want to just cook for 1? It is sooo difficult to cut down the portions and still come up with a dish close to what the recipe described.

For that matter - My recipe is made for 1 person only. (You are welcome to use it at a dinner party)

Ingredients:
1 Large De-boned chicken breast
1/2 Garlic Clove
1 Cup of soy sauce
1/4 Cup olive oil
1/2 white wine
1/4 Cup of lime juice
1/2 Cup of brown sugar
1/2 Tablespoon of ginger powder
1 small can of sliced mushrooms
2 tomatoes
5 lettuce leaves

Directions:
Cut the chicken into small pieces
Place the garlic, soy sauce, wine, olive oil, brown sugar, lime juice and tomatoes in a blender.
Blend but do not liquefy completely.
In a pan, sautee the chicken together with the mixture and the mushrooms until chicken is cooked and covered with all the ingredients.
Let it cool for 5 minutes.
Place the chicken in 1 of the lettuce leaves, wrap it like a burrito and place on the dinner plate.
Repeat the same with the other lettuce leaves.

Voila!! Ready to enjoy...

Recipes in a pinch !!

Hello everyone!! Oh Nooooo!! It is time to go to the grocery store. I have nothing to eat at home!!
Ok, don't panic - (Yes, I am starving)

Mmmm, let me see - what do I have here??

Ok yes, here it is:

Tuna Salad
2 tuna cans,
1 box of elbow pasta
1 finely chopped green onion
2 finely chopped tomato
2 finely chopped celery stalk
1/2 cup of finely chopped cilantro
1/2 cup of lite mayo

This is what I am going to do:
1. Cook the pasta in salt water until tender or al dente.
2. In a bowl mix the tuna with the green onions, tomatoes, celery, mayo and cilantro
3. Add this mixture to the pasta and mix everything together.

Ta da!!! Mmmmm delicioso!!

Ohh and for dinner - here is my plan:

Fish and chips - Criollo style!! (Hehehe...)
4 Tilapia fillets
1 Chopped Medium Onion
1 Chopped Red pepper
1/4 cup lemon juice
Salt & Pepper

1. In a skillet stir fry the onion and the red pepper with a little olive oil.
2. Place the tilapia fillets on a baking sheet, add salt pepper (enough for flavor).
3. Sprinkle the lemon juice over the fish fillets
4. Place the already stirred fried onions and red peppers. Distribute all of them over the fillets.
5. Cover the fillets with aluminum foil and place in the oven (375 degrees for 30 mins)
6. Uncover for and bake for another 10 mins or until juices evaporate

Since I will have no more time to make anything else - I am thinking of adding a baked potato to this dish. I will microwave it so I earn time. Here is how to do it:

1. Wash and dry the potato.
2. Poke holes in the potato to vent steam.
3. Wrap the potato in a paper towel on a plate and put it into the microwave.
4. When using a 1200 Watt microwave, set the timer to 3:00 for a very small potato; set it to 4:30 for a medium-sized potato; and set it to 6:00 for a large potato. Huge potatoes require 7 to 8 minutes.
5. The microwave should stop before the potato is soft enough for eating and while it is still slightly firm deep inside.
6. Let the potato stand for five minutes. This allows the inside of the potato to finish cooking with the hot steam that is trapped inside.
7. Cut open the potato and garnish with parsley.

In this picture I cut the potatoes in cubes and placed them in the oven with the fish.

Hola amigas - Hoy es mi día de ir al supermercado... Pero me estoy muriendo de hambre asi que voy a preparar algo supremamente rapido antes de salir.
Aqui va:

2 latas de atún,
1 caja de pasta (coditos)
1 cebolla larga bien picada
2 tomates bien picados
2 tallos de apio picados
1/2 taza de cilantro finamente picado
1/2 taza de mayonesa light

1. Cocina la pasta agua con sal hasta que quede al dente.
2. En una vacija mezcla la cebolla, el atún, los tomates, el apio, la mayonesa y el cilantro hasta que quede todo bien incorporado
3. Mezla todo con la pasta

Ta da!!! Mmmmm delicioso!!

Ahh y para la cena ya tengo un plan:

Fish and chips - Al estilo "Criollo" !! (Hehehe...)
4 filetes de pescado
1 cebolla pequeña
1 pimenton rojo
1/4 taza de zumo de limon
Sal y pimienta al gusto

1. En un sarten sofríe la cebolla y el pimentón.
2. En una lata engrasada pon los filetes de pescado, con la sal y la pimienta.
3. Sobre los filetes pon el guiso de cebolla con pimentón.
4 Tapa los filetes con papel aluminio.
5. Lleva al horno durante 1/3 hora.
6. Destapa los filetes y hornea durante 15 minutos mas o hasta que el líquido se haya evaporado.

Como no tengo más tiempo esta noche haré unas papas en el horno microondas. Quedan como papas horneadas.

1. Lava y seca las papas.
2. Hazle hoyos a la papa para que pueda salir el vapor.
3. Envuelve una por una en papel de cocina y ponlas en un plato. Llevalas al horno microondas.
4. Para una papa mediana ponla a calentar durante 4 minutos y medio.
5. Deja la papa reposar durante 5 minutos para que se termine de cocinar por dentro.
7. Pártela por la mitad para comerla con perejíl por encima.

Hola amigas!! Espero que estén pasando un fin de semana fenomenal. Todavía tenemos este clima caliente, perfecto para ir a la playa o para una fiesta en la piscina.

Hoy quiero compartir una receta que se parece a una que mi mamá siempre hacía. Lo único es que no me acordé bien como la hace ella así que decidí inventarme una. LOL :)

Sirve para toda ocasion. Lo que más me gusta de esta receta es que es facil, rápida, económica y super deli!!

Vas a necesitar
10 salchichas (Sirve para 4 personas)
3 oz de salsa de tomate (ketchup)
1/2 taza de azúcar moreno
1/2 taza de vino blanco
1 cucharada de mostaza
1/2 cebolla pequeña
1 cucharadita de sal
1/2 cucharadita de paprika

Corta las salchichas en trocitos. Pica bien la cebolla.
En una licuadora junta todos los ingredientes menos las salchichas.
Licúa todo hasta que la cebolla esté bien incorporada.
En un molde hondo para hornear, pon las salchichas y la mezcla licuada.
Lleva al horno durante 1 hora o hasta que la salsa esté espesa y que cubra bien las salchichas.
Se sirve caliente, con un poco de queso parmesano por encima. Disfrútalas como aperitivo o tapas.

Hello! Hope you are having a wonderful weekend. A bit hot but great to go to the beach, or to have a pool party.
Today I want to share a recipe that my mom used for different occasions. Whether it was a pool party, a picnic to take to the beach or a fancy cocktail party, everyone loved this appetizer.
What I love about this dish is that is cheap, easy, fast and delicious:

What you will need:
10 sausages (hot dogs)
3 oz of ketchup
1/2 cup brown sugar
1/2 cup white wine
1 tablespoon mustard
1/2 small onion
1 teaspoon salt
1/2 teaspoon paprika

- Cut the hot dogs into pieces (each piece around 1 inch long).
- Chop the onion
- In a blender, place the ketchup, brown sugar, wine, mustard, onion, salt and paprika.
- Blend it until the onion disappears.
- Place cut hot dogs and ketchup mixture in a baking pan or oven safe dish.
- Bake for 1 hour on 350 degrees.
- Make sure the sauce becomes thick to cover the hot dogs.
- Sprinkle Parmesan cheese.
- Serve hot as an appetizer.

Hello everyone!! - Hope you have had a great week so far.
It has been extremely hot here in the San Fernando Valley areas. I hope you are drinking enough water to keep hydrated.
Are you planning a BBQ or an outdoor party? Here is a quick and easy recipe to cool your beverages in 3 minutes!!

1. Put Ice in an cooler
2. Add 8 cups of water for each bag of ice you use
3. To the water with ice add 1 1/2 pounds of salt
4. Add 2 cups of rubbing alcohol

Yeah incredible huh? - Enjoy!!

Hola amigas! Hoy es Viernes 18 de Septiembre del 2009. Hoy te voy a mostrar una receta superdeli por si tienes invitados esta noche y todavía ni has empezado a pensar en el menu.

La receta de hoy se llama Pincho/ Anticucho o Brocheta de Rollitos de Pollo. (Es algo fácil y rápido para que no tengas que quedarte todo el día en la cocina)
- Para 4 personas -
Vas a necesitar:
4 pechugas de pollo deshuesadas
1 diente de ajo picado
2 cucharadas de pasta de tomate
4 tajadas de tocineta ahumada
Un buen puñado de hojas de albahaca fresca
2 cucharadas de aceite vegetal
Ensalada verde para acompañar
1. Pon una pechuga de pollo entre 2 hojas de plástico de cocina y golpéala con firmeza con un rodillo para aplanarla y déjala de un grosor uniforme. Repite la operación con las otras pechugas.

2. Mezcla el ajo y la pasta de tomate y extiende la mezcla sobre el pollo. Pon una tajada de tocineta sobre cada pechuga y añade encima hojas de albahaca. Sal y pimienta al gusto.

3. Enrolla firmemente las pechugas y cortalas en rodajas gruesas. Ensarta las rodajas en 4 brochetas, conservando la forma de rollito.

4. Rocea ligeramente las brochetas con aceite y ponlas a asar en el horno precalentado durante 10 minutos, dandoles la vuelta una vez se hayan dorado por un lado. Fíjate que el pollo esté bien cocinado. Sírvelas calientes con una ensalada verde, y una salsa Ranch para refrescar tu plato.

5. Puedes añadir un puré de papa con ajo y ya está! Esta cena impresionará a tus invitados.

Today’s recipe is called Pinchos de Pollo or Chicken Rolls Skewers. (This is an easy and fast recipe so you don’t spend all the day in the kitchen)

For 4 people –
You are going to need:
4 deboned chicken breasts
1 chopped garlic clove
2 tablespoon of tomato paste
4 slices of smoked bacon
A handful of fresh basil leaves
2 tablespoons of vegetable oil

1. Place one chicken breast in a Ziploc bag and hit it with a roller to make it thinner. Repeat the same thing with the other breasts.

2. Mix the garlic and the tomato paste. Spread the mixture on the chicken. Put a slice of bacon on each breast and add the basil leaves on top. Salt & pepper for flavor.

3. Roll up the breasts firmly and cut them into thick slices. Place the slices of chicken into 4 skewers, conserving the form of a roll.

4. Lightly sprinkle the skewers with oil and place them in the preheated oven for 10 minutes. Once golden, turn them around. Make sure the chicken is cooked throughout. Serve them hot with green salad and Ranch dressing.

5. You can add garlic mashed potatoes to complete your dish.
Impress your friends with simple dishes like this one. Enjoy and hope you read me again.
